I am being cautiously converted from my lifetime membership in the Crock Pot Posse to the Cult of Instant Pot. The induction began when I recently lamented to fellow sailors that although I love cooking in my crock pot, I fear I need a faster, more energy-efficient alternative for life outside the marina (when shore power will not be an option). Search no more they cried. Viola! The Instant Pot. An electric all-in-one slow cooker, pressure cooker, steamer, rice cooker, and whatever else you can dream up. If you can slice it or dice it the Instant Pot can turn it into something delicious in barely the time it takes to set the table.
Not one to easily buy into the hype, I began my research. Scrutinizing reviews, watching videos, perusing recipes, and reading the social media tales written by the faithful. Having been positively swayed, my new Instant Pot Duo Plus soon arrived via the magic of Amazon.
Winn Dixie’s BOGO on London Broil prompted last night’s first attempt. Although one meal does not an expert make, both Todd and I thought my improvised recipe not only tasted delicious, but was tender, juicy, and pulled apart with a fork. Best part? It was really easy and took less than an hour from start to serve.
Here’s the recipe/steps for those interested:
Tanya’s Instant PotLondon Broil
Cut steak to fit pot, season with salt and pepper.
Push Sauté button.
Add a generous amount of olive oil.
Drop meat in pot (be careful, it may splatter).
Add a couple of splashes of Worcestershire.
Brown meat.
Turn off pot.
In a mixing bowl combine 1 can cream of mushroom soup, 1 package dry onion soup,
approximately ½ soup can of beef broth and ½ can of red wine.
Mix well. Pour on top of meat in pot. Set pot to pressure cook for 40 minutes.
Next time I will try throwing in some potatoes and carrots when the meat is done. I think perhaps 10 minutes or so on steam will do it.
Tonight’s challenge: boneless country ribs (Winn Dixie was on a roll this week with the BOGOs).
